Stuart Little represents upperclass life while Remy is a hero of the working class and deals with day to day struggles. While Stuart Little may pretend to be kind to Remy, he would be quick to exploit him for his labor. Stuart Little lives a near carefree lifestyle in a human household where he is accepted by a human family and loved- provided with clothes and irregularly small motorized vehicles- which were likely crafted specifically for him. Whatever worker who had to make those machines had to put in extra effort just to meet the wants and desires of a single suburban mouse. Remy lives in the cracks and holes of society at the beginning of his movie, and is HATED and rejected by every human that he comes across- Even Linguini rejects him at first. But Remy then uses his passion for cooking to help Linguini keep his job at Gusteau's restaurant. By the end of the movie, Remy moves up in the world and helps a working class, struggling chef to become the manager of a whole new restaurant and helped him both impress and befriend the terrifying food critic. Not to mention Remy's family troubles in both the beginning and middle portions of the movie, which then turns around to them helping Remy out- UNIFIED in purpose moving forward.

In conclusion: Remy is a hero and comrade of the working people, while Stuart Little is a FUCKING tyrannical exploiter of hard working laborers.
